Harry Potter ButterBeer Inspired Cupcakes

I love to bake and I like to get creative with box cake mixes. There are so many ButterBeer inspired cupcake recipes on Pinterest but most are from scratch.  After reading a few, I created these.

Cupcakes:
1 packaged cake mix (this time I used Betty Crocker Siper Moist Golden cake mix
1 package butterscotch pudding
1 stick of butter (1/2 cup)
1 cup of Jones Cream Soda (American cream soda that has a buttery sweet taste, not the pink Canadian cream soda)
3 eggs
tsp butter flavour (found it in the States)
tsp vanilla (you know, the good kind from Mexico)

Preheat oven to 350.  Put cupcake liners in two muffin tins (24).  Mix together cake mix, pudding mix, softened butter, cream soda,3 eggs, butter flavour and vanilla.  Beat on low to mix and then on medium for 2 minutes.  Fill each liner 2/3 full.  Bake 18 - 22 minutes or till a toothpick comes out clean.
Let cool completely.

For icing I used Duncan Hines Whipped White Fluffy White icing and Caramel flavour mix.    Use a piping bag and star tip to frost the cupcakes and then I drizzle some caramel or butterscotch ice cream topping on top.

Enjoy!
